Mushroom Pasta

 

I know it’s been quite few days, but I have good excuse. I was having a friend of mine from the States staying with us and I had to show her around. Fatimah is a friend of mine from the days back when I was in the States pursuing my Master’s degree. We lost contact for a while and one month ago she contacted me again. She told me that she was going to come to Greece and she was wondering if we could meet. I then told her that not only would we meet, but I would like her to stay with us and show to her my city Athens. So, she came and we spent a wonderful time together. I was very happy to see that all these years she hasn’t changed from the nice person I originally met 14 years ago. Because she stayed for that short period of time, I tried to give her just an aroma of Athens. That included food also. I tried to show her dishes and tastes of a kitchen that is so different from that of the US. Now she goes back and hopefully we will meet again in the next years. This dish is very simple. I made it up one day before she comes, because I was running out of time. It is very simple very easy to make and very tasty.

 

Mushroom Pasta
Ingredients
1 onion finely chopped
15-20 fresh mushrooms the small white ones cut in pieces
4 tbsp olive oil
1 red bell pepper
1 green bell pepper
1 cup white wine
1 can Campbell’s Golden Mushroom soup
1 can water
Salt
2 tbsp molasses
500 gr. Pasta any type you want

 

Instructions
In a skillet heat the olive oil at medium- high heat. Add the onion, the mushrooms, the red and green pepper and sautee for 2 minutes. Add 1/4 cup of wine. Sautee for another 2 minutes. Throw another 1/4 of cup wine. Sautee another 2 minutes and then throw the rest of the wine. Continue to sautee and when the quantity of wine has decreased to 1/3 and the vegetables have softened throw the soup, the water and the molasses and stir well, so as everything to combine. Lower heat to low and let it cook for 20 minutes. In the meantime, boil pasta according to package instructions. Do not overcook because pasta will continue to cook when you will throw it in the sauce. When the pasta and sauce are done throw the one to the other and mix well. Kali Orexi.
